4 Easy Barbecue Recipes

Summer is in full swing here in the Netherlands, so it’s time to bring out the grill and barbecue until the wee hours. Yesterday I had a small gathering with friends and cooked up some simple and quick dishes. I would love to share them with you, so here goes.

Appetizer: Small skewers of watermelon, feta cheese and mint

As an appetizer I made these tiny skewers of watermelon, feta cheese and mint. I love the combination of the three flavours: sweet, fresh and salty. The perfect combo!

Entree: Buratta with grilled romano tomatoes and limoncello-ginger sauce

This entree will wow your guests and is super easy. All you need is buratta, which is a super creamy, high quality mozarella, basil, romano tomatoes, and limoncello zenzerro sauce from Paradijshof. The sauce is a mixture of limoncello, ginger, citrus and agave with chilli.

Main: Chicken skewers, 2 ways

I made 2 different kinds of chicken skewers. First the traditional sateh, a family recipe. My parents are from Surinam where there are a lot of Indonesian influences. The chicken skewers are marinated in sweet soy and spices, grilled, and topped with spicy peanut sauce and fried crispy onion slivers.

How to marinate the chicken:  ginger, garlic, onion, sweet soy, splash of rum, splash of coca cola, ground cumin, laos, ketoembar, Chinese 5 spices and Adobo. Let marinate in fridge for at least 4 hrs before placing on the grill

The other chicken skewers are made of chicken marinated in ginger curry from Paradijshof. The curry is made of tamarind, coriander, cumin, ahornsyrup, ginger, spices and agave.

Dessert: Roasted figs in Amaretto with vanilla ice cream, thyme and walnuts

This dessert will wow your guests! And it’s so simple! You just put the figs on a square of foil, cut the figs open, drizzle amaretto in them and make a little package of the foil so the amaretto can’t seep out. Then you put them on the grill until warm and soft. Once you open them the juices will flow out. Serve them while warm with vanilla ice cream, chopped walnuts, thyme and a drizzle of honey. I recommend spooning it with all ingredients included, you will love how the different flavours complement each other.
