I don’t think a week goes by that I don’t eat a Caprese salad. I feel it’s the best summer salad ever created. The salad is even better if the tomatoes and basil are fresh from the ‘field’. I picked these blushing tomatoes at the PYO farm, and the basil is from my own herb nook on my balcony. The Caprese salad is fresh and perfect for lunch as well as for a light supper on a hot day. I like to drizzle some pesto on the mozarella cheese. What is your favourite salad?
