In the weekends I always treat myself to something special. On Saturdays I start with a big breakfast and on Sundays with something special for brunch. Lately I have tried a lot of recipes from Rachel Khoo’s cookbook Little Paris Kitchen. The recipes are easy yet so delicious and I can secretly pretend to be in France. I even plug in my iPod to listen to an album from Madeleine Peyroux to simulate un dimanche en France and a little joie de vivre. Silly me. Imagine a Sunday brunch with delightful Croque Madame muffins: small bread cups filled with eggs, and a béchamel cheese sauce baked in the oven. I altered the recipe somewhat to make it my own because I rather not eat ham, and I prefer it with Roquefort cheese. For the recipe click here.(video of 5 minutes)
