Warm up with a Meat Chops Stew

Hi all! I’m back from my winter break and ready to take on a new year of blogging. I’m kicking it off with a warming winter recipe; a meat chops stew. When I come home and it’s really cold outside, I love to indulge into something with seasonal products and rich flavours. Slow cooking seems to be a trend at the moment. It brings out the flavours and also let us personally slow down. While the stew is cooking, you have time to relax before dinner. This recipe needs little time in the kitchen and you can even chop the ingredients the night before and throw them into your pan the next day to slowly cook. I used sweet potato, butternut squash, meat chops, onion, cinnamon, pecan nuts, and ingredients to give it the flavours of winter. Scroll down for the complete recipe.

  • 4 meat chops
  • 2 sweet potatoes
  • 550 gr butternut squash
  • 3 roma tomatoes
  • 3 bay leafs
  • 1 large onion
  • 1 cup of meat stock (bouillon cube)
  • 2 cinnamon sticks
  • black pepper and salt
  • clove of garlic
  • ground cumin

Directions

  • Chop the potatoes, tomatoes, onions and squash in large chunks
  • Bake the meat chops with the onions and garlic
  • season with salt, cumin and black pepper
  • Add the other ingredients and let simmer on low heat for an hour
