Imagine waking up to the smell of fresh muffins in the oven on Christmas morning. And while you open the presents still in your pyjamas, you indulge in the fresh bakes with a cup of hot coffee or a glass of milk. My cranberry, walnut and orange muffins are the best and also a healthy treat to bridge the hours between waking up and an extravagant Christmas brunch. The different flavours of the ingredients are warming: spicy cinnamon, earthy nuts, sour cranberries and sweet and zesty orange. (scroll down to get the recipe) The muffins also pair well with Chai tea or my fresh mint, ginger and orange tea.
Ingredients
- 300 gr flour
- 250 gr sugar
- 1 tsp baking powder
- 100 gr dried cranberries
- 1 orange
- 250 gr butter
- 4 eggs
- 50 gr walnuts
- 1 tbsp cinnamon
- 2 tsp vanilla essence
Preparation
- Preheat oven to 180°C
- squeeze the orange and set aside
- chop the walnuts and set aside
- mix the butter and flour
- add the eggs one by one
- mix in the sugar, vanilla, cinnamon and baking powder
- pour in the orange juice
- add the walnuts and dried cranberries
- pour the batter into the muffin moulds
- bake 30-40 minutes
