Summer is near but not quite here yet. That’s why I love to create desserts that lure to summer with the flavours of those sultry mid-summer nights: sweet, fresh but with a zesty undertone. The simplest dessert to make is a strawberry jelly with red gooseberries and topped with raspberries and vanilla cream. You prepare the jelly according to the package and add the gooseberries. Cool in the fridge. Then top with the fresh fruit and cream and indulge! I like it best around tea time as a snack. Kids will love it!
for the vanilla cream you’ll need
- 255 gr cream cheese
- 4 tbsp cane sugar
- 1/2 vanilla bean scraped
- 120 ml cold heavy cream
Put the ingredients in a bowl and mix with an electric mixer until smooth. That’s all! Enjoy!
